You can still manually add their special abilities, but familiar sheets are weird. For example, their AC is completely unchangeable, even with things like flat footed. I can’t remember how quickly witches get additional familiar abilities but I’d double-check with your GM if you can’t pick an Imp because of that or because they’re not using Specific Familiars at all.
